Whole pears roasted in garlic

Serves: 4

Preparation Time: 10 minutes

Cooking Time: 35 – 40 minutes


  • 4 Packham Pears
  • 4 cloves of garlic
  • 1 tsp white pepper
  • ¼ cup of olive oil
  • 1 cup chicken stock
  • 2 Tbsp white wine vinegar
  • 1 Tbsp seeded mustard
  • 6 sprigs fresh thyme
  • 2 Tbsp maple syurp


Preheat oven to 200ºC.

Peel pears and place in deep baking tray.

In a medium bowl combine garlic, white pepper, olive oil, white wine vinegar.

Stir through seeded mustard and thyme sprigs.

Pour marinade over the pears and roast in preheated oven for 35 – 40 minutes. Baste occasionally. In the last 10 minutes of cooking drizzle with maple syrup.

Serve with beef sausages, and garnish with thyme sprigs.
