2 slices ciabatta bread
1 ripe avocado
1 Williams’ or Packham’s pear (skin left on)
Few leaves of baby rocket
Juice of 1 lemon
Shavings of Stilton cheese


METHOD
  1. Toast the bread both sides in a toaster or in the oven on a baking tray.

  2. Peel and mash the avocado in a small bowl and add a few drops of fresh lemon juice and mix through and place the seed in the middle of the mash to prevent browning.

  3. Wash and slice the pear and brush each slice with lemon juice to prevent browning.

  4. Using a cheese slicer, shave thinish slices of stilton (it’s a crumbly cheese so don’t try to shave long or large slices).

  5. One each slice of the ciabatta, spread the mashed avocado, lay a couple of slices of the pear and top with the slices of stilton and a couple of leaves of rocket to serve.
