2 slices ciabatta bread
1 ripe avocado
1 Williams’ or Packham’s pear (skin left on)
Few leaves of baby rocket
Juice of 1 lemon
Shavings of Stilton cheese
METHOD
- Toast the bread both sides in a toaster or in the oven on a baking tray.
- Peel and mash the avocado in a small bowl and add a few drops of fresh lemon juice and mix through and place the seed in the middle of the mash to prevent browning.
- Wash and slice the pear and brush each slice with lemon juice to prevent browning.
- Using a cheese slicer, shave thinish slices of stilton (it’s a crumbly cheese so don’t try to shave long or large slices).
- One each slice of the ciabatta, spread the mashed avocado, lay a couple of slices of the pear and top with the slices of stilton and a couple of leaves of rocket to serve.
