200g piece of fillet (or equivalent) steak, about 2cm thick
1 pear (Williams or Packham pears)
Freshly ground black pepper
Olive oil

METHOD
  1. Fill a saucepan with water and bring to the boil.

  2. Heat a char grill pan on high.

  3. Bring the meat to room temperature (for about 30 minutes before cooking) then brush it with the oil on both sides.

  4. Peel the pear, leaving the stem intact, cut a thin slice from the base and place gently into the boiling water, then turn it down simmer for 10 minutes until tender. Remove and allow to cool.

  5. When the grill is hot, place the meat on to cook. Only turn it once during the cooking time and cook for the following time…
    Rare – 4 minutes each side
    Medium – 6 minutes each side
    Well Done – 8 minutes each side

  6. While the steak is cooking, slice the pear into segments, from the stem, cutting through the whole pear, but leaving the stem end intact so you can fan it out.

  7. When the steak is ready, serve it on a plate, place the pear on top and fan it out over the steak and dust it with cracked black pepper.

  8. Serve with salad or steamed vegetables.
